Default Whitetails Loins Recipe

AL’S ULTIMTE WHITETAIL LOINS

1 Ounce Course Salt (about 1/8th of a cup)
150ml Morton’s Tender Quick
1 Cup Brown Sugar
1 Tablespoon of Pickling Spice
˝ Teaspoon Black Pepper (fresh crushed is the best)
3 Tablespoons of “Keg” Season Salt
1 Ounce Soya Sauce
4-5 Cloves of Fresh Garlic
˝ of a Large Onion

Boil water
Add dry goods and Stir
Pour into plastic container
Add cold water (equal amount to the hot amount)
Mix and Cool
Add Meat, Onion and Garlic
Mix every day or two for 5-6 days
Keep meat submerged in brine for 6 days total
Rinse meat and allow to tack up prior to smoke
2 pans smoke for 4 hours
35 minutes in oven at 350 degrees covered. Let sit in juice overnight to cool
Note: Maple Syrup or Brown Sugar with a dash of Peppercorn half way thru the smoke process.
