Default Duck

Duck recipes anyone? I have raised ducks for years, and normally had them processed and smoked by a butcher, they were always amazing even if it was an older bird. Now I am again raising ducks (think I have 18 now? Something like that...?), and want to do all the butchering/ smoking myself. I killed and skinned one last night (he's resting in the fridge), have a few more ready to get processed. Want to make a plucker since duck fat/ skin is great to leave on the bird.

I have a homemade smoker big enough for maybe 6 or 8 birds, a grill, wok, hopefully an oven soon so I can try slow roasting one.... I'd love some recipes if anyone has them. Was thinking the first one might be smoked on the upright chicken cooker since it's skinned.
