Default Grilled Lobster tail

Medium sized tail
split shell
top w/ plenty o butter
and some seasoning
wrap in aluminium foil
grill on top shelf until shell is red/pink

add some wood to the fire for a little smoke flavor
then crack open the foil for a little while so smoke in get to the meat

now we're speaking my language! Here's one of my favorites

bring water to rolling boil
add zattarains new orleans lobster boil
toss in lobster tail (and other uncooked seafood if you got it, good for 2lbs of stuff)
bring water to rolling boil then kill the heat
keep lobster tail in for 1 min before it is completely done then let it rest
split tale, rub with fresh garlic and butter
place meat side down and finish over open hickory wood coals till finished

top with a bit of cayanne pepper and lemon

Equal parts orange juice and butter, some paprika for color and a dash of Mrs. Dash, marinade in that for an hour or so. Cook it in the saucepan or on the grill is best. Use the sauce for dipping if you like. MMMM, best lobster tail ever.
