I grew up just south of KC and love good BBQ too. I've been using a pellet smoker for convenience but it's not the same as a good ol stick burner.

Default Dry Rub for brisket

I've done several briskets over the last few years and some have been really good and some soso. Anybody want to share their dry rub recipe with me? Don't really care for brine as much.

3 cups paprika, the darker the better
2 cups sugar can use brown or demererra
2 cups garlic powder
1 cup salt, I used pickling salt to avoid the iodine in table salt
1 cup onion powder
1 cup seasoned salt
1/2 cup chili powder may add a bit of hotter powder if needed
1/2 cup black pepper
1/2 cup Black Magic seasoning

I also strongly recommend injecting booze & bacon fat! Just my recipe
